Waterleaf is a herbaceous plant with edible leaves. Mostly found in West Africa and North America. In Nigeria, waterleaf is one of those readily available vegetables, they literally grow everywhere. You must have seen them on the roadside or even in your backyard.
A lot of times they turn out as weeds because they are not intentionally planted; but oh well, we like this kind. Waterleaf is loved in Nigeria because it is used to make some of our favourite delicacies such as Edikaikong, Okro, Afang soup, salad, and loads more. Of course, as the name implies, it has high moisture contents of approximately 90.8gm per 100 gm of the leaf.
